Pesto Sauce
This delicious pesto sauce is great added to hot or cold pasta dishes,
sauces, pizza, sandwiches, panini’s, and your other favourite meals.

Ingredients:

4 tbsp extra virgin olive oil
3 cloves garlic
1/3 cup pine nu
ts
2 gently packed cups basil
1/2 cup parmesan cheese
salt and pepper to taste

Procedure:
In blender combine oil and garlic. Blend until garlic is well
chopped. Add pine nuts and basil until mixture forms a paste.
Blend in cheese, salt and pepper until well combined.

Store in airtight container in refrigerator for
up to a week, or freezer for up to two months.
 

 
 


Orzo Salad
This salad is served cold and is perfect with salmon, chicken, or by itself. 


Ingredients:

1/4 cup extra virgin olive oil
4 lemons, juiced
1- 500 gram bag of orzo pasta (cooked to al dente)
2 cups chopped coloured peppers
1 cup finely chopped red onion
1 cup chopped, pitted kalamata olives
1 cup chopped feta cheese
1/2 cup chopped cilantro
salt and pepper to taste
1/2 cup fresh peas
1/2 cup freshly roasted pine nuts (optional)

Procedure:
In a large bowl combine olive oil and lemon juice, whisk until emulsified.
Add pasta until fully covered with mixture. Add remaining ingredients and mix well.

Store in airtight container in refrigerator for
up to a week, or freezer for up to two months.



 


Spiced Hot Apple Cider
This hot beverage is excellent for a cold winter night.
It will warm you down to your toes.


Ingredients:
2 litres sweet apple cider
1 litre water
1 sliced orange
1 sliced lemon
2 cinnamon sticks
2 apples
whole cloves


Procedure:
Combine cider and water in a large pot over medium heat.
Add the sliced orange, lemon and cinnamon sticks. Stud the
apples with the cloves and add to the pot. Simmer on low heat for 10 minutes.

Serve and enjoy!




Apple Crisp

A delicious way to use crisp fall apples.


Ingredients:
5 apples
1/2 cup butter
1 1/2 cups brown sugar
1/2 cup flour
1 1/2 cups oatmeal
2 tsp. cinnamon
1/2 cup fresh berries (optional)

Procedure:

Core, peel, and slice the apples into a baking dish. Add berries.
In a medium bowl, cream the butter well. Add sugar, flour, oatmeal
and cinnamon. Pour on top of baking dish, and mold to fit top.

Bake at 375°F for 35-40 minutes.

Top with ice cream and serve hot.
